Quick, Healthy Breakfast
The last couple of days I've been struggling to find something quick and healthy for breakfast. Something that has some taste and I can take on the go if I need to. Going through a few recipe ideas I found the breakfast burrito. It's really pretty simple and you can customize it anyway you'd like. I usually do a few eggs, cut up a little sausage and add in a little spinach. Throw it on a tortilla with a little salsa, roll it up and I'm good to go. It's actually a pretty balanced breakfast. I try to fry the eggs in a little butter or coconut oil to get my healthy fat in. The eggs give me my protein. The spinach gives me my veggie. And the wrap is my carbohydrate. It's nice because it is something I can create based on whatever foods I have in the fridge that day. You can throw in whatever veggie you like or maybe you have some left over chicken you can throw in. Or maybe some peppers and onions. However you like. You can even experiment with the type of tortilla you use. If you want to stay away from the white flours, or gluten in general, try a brown rice tortilla. They don't roll quite as nice, but if you heat them up a little bit they are a little more easy to use. The other quick breakfast Kyle and I like to make is a smoothie. We use frozen strawberries and blueberries, a little water, protein powder and almond/peanut butter. Again quick, healthy and delicious!
